Coconut is a hard shelled fruit with soft flesh. It is used in many ways, raw fruit has water, dried fruit is used to extract oil and soft flesh is used in many cuisines. It is the main source of food for millions of people around the tropics. In some regions, coconut molasses is also used to extract dried sugar, and jaggery, whereas the nutmeat of raw shells tastes like custard, and has a buttery consistency. When the nut gains maturity, it is dried and husked and cut open, then it is called copra. Copra can be either sun dried or kiln dried for curing, before processing for oil. White meat of immature nut has a pleasant crisp nutty feel, which can be used as grated, thinned or chipped. Coconut water is an excellent source of sterile hydration, where fresh water is not available. For several centuries, sailors have drunk coconut water to save their lives from pangs of salinity of sea.  Our coconuts are well husked, mould free, full of sweet fluid, easy to scrap, soft meat.
