Desiccated Coconut is the shredded, dehydrated coconut meat of coconut kernel. It is used in place of coconut for edible purposes in Northern India and in metropolitan cities for household food preparations and in hotels and catering establishments because of the convenience in use. Bulk consumers of this item are biscuits and confectionery manufacturers. It is also used in bakeries and in sweet meet making unit, especially in Northern India. During summer season when there is shortage in the availability of milk, desiccated coconut is used in the preparation of sweets as a substitute for milk. In India three grades viz., coarse, medium and fine are made.

Fully matured fresh coconuts without husk are de-shelled using the appropriate machinery. Next step is to remove the brown testa or parings. Brown testa is removed by means of paring machines. Water inside the nuts is drained off. After this the nuts are washed in a tank of clean water. Washed nuts are fed into disintegrator. The shredded coconut kernel from the disintegrator is introduced in Milk extractor and takes pure milk. Then filtering and bottling
