Meishi offers you Thai long-grained red rice, it is a not-to-miss part of Thai culture as it is the main staple of their diet. Also labeled as Khao Deng, red rice is a very old grain that compliments Asian cuisine. History indicates that rice has been growing in Thailand since the 6th century. Thai red rice has a soft texture, nutty taste, and chewy consistency. The delicious rice has long grains with a red tint. The rice is refined to take out the outer shell, but the bran or external layer is not polished off, unlike white rice. It is packed full of energy with vitamin B1, iron, and loads of calcium. Thai red rice is available in many varieties. Thai red cargo is the most popular amongst Thai people. It has long grains and looks almost like Jasmine rice. Coral Jasmine red rice is another popular type that is semi-polished and has an earthy shade. All varieties of red rice are high in fiber due to its unpolished external shell. Thai long-grain red rice derives its name from its characteristic red color. It is rich in antioxidants and flavonoids, such as quercetin, myricetin, and anthocyanins apigenin, which impart a reddish hue to the rice. Pleasant nutty aroma with a slightly firm, chewy exterior and tender interior. Also known as Thai cargo rice. Thai people are very much addicted to this type of rice; it goes well with breakfast, lunch and dinner. The added attraction is that it takes very little time to cook. The flavonoids and minerals present in red rice offer a gamut of health benefits.

    • With Meishi, Chenab takes you on a journey through the Orient by bringing for you authentic ingredients for Cuisines from China, Thailand, Vietnam, Japan, Indonesia, Malaysia. Great for traditional Asian recipes made in professional or home kitchens. Meishi offers you Thai black rice. Thailand is known as “The Rice Bowl of Asia”. With that, you can already guess the importance of rice to the Thai people. Thai black rice, Riceberry is one of the popular rice varieties in Thailand, a cross of two renowned rice strains in the country. Riceberry is a cultivar of rice that was created by hybridizing Hom Nil (black jasmine rice) with Khao Dok Mali 105 (another type of jasmine rice). Unlike most varieties of rice, Riceberry has a strong fragrance that’s savory and almost meaty in the aroma. Because it’s a whole grain rice, the bran gives it a similar texture to brown rice; however, the interior is tender, nutty and a little sweet. It’s a long grain rice that has a reddish black color when raw, that turns purplish black when cooked. Because Riceberry is a whole grain rice, the bran and germ have not been milled off; however, unlike brown rice, it cooks in the same amount of time as white rice. The purple hue of this rice is caused by anthocyanins, which are a naturally occurring pigment and antioxidant. Riceberry differs from other whole grains – it cooks relatively fast and is prepared the same as jasmine rice. Riceberry Benefits: Thai riceberry or black rice is the new super grain that comes with amazing benefits, from power antioxidants to its anti-inflammatory agents. One of the anti-inflammatory agents present in riceberry is omega-3 fatty acids.

    • Whilst reading the 17th Century diary of John Evelyn, our founder, William Tullberg found a recipe for Wholegrain Mustard. His curiosity piqued, he tried his hand at the art of mustard making in his home in Urchfont, Wiltshire. A little later that year, after his initial trials, William adapted an industrial coffee mill to grind mustard seed. He sold a few jars of his fabulous mustard to the local pub, complete with handwritten labels. Wholegrain Mustard in the UK was reborn. Continuing our commitment to buying the best, local ingredients wherever possible, Tracklements enlist the help of a local farmer to grow mustard for them. Tracklements is awarded Specialty Producer of the Year in the Great Taste Awards reflecting our commitment to making the best products we can, using the best ingredients and traditional, handmade cooking techniques. Chests puff up yet more when Tewkesbury Hot Mustard is voted one of the UKs top 50 foods in the Great Taste Awards. Today Tracklements is now headed up by William’s son, Guy. We’re still based in Wiltshire and we still make a range of over 50 products. Everything is still made by hand, in small batches to traditional recipes which we still sniff out from recipe books, old and new, and distant countries. To match the fiery taste Tracklement launched its new mustard SPITFIRE Chili Mustard. • Mexico is the home of chilies! With more than 150 indigenous varieties of chilies to choose from, with each having a special use. we have an exciting range of the leading and most popular varieties of dried Mexican chilies. These exceptional chilies are not only about the heat but also about their aroma and taste. In fact, many of the chilies are not ‘hot’ but impart a characteristic taste which is unforgettable. The De Arbol chilli is said to have originated in Mexico. The name “De Arbol” means “tree-like” in Spanish and was named that because of its long woody stem. Arbol is a small, thin Mexican pepper that has a smoky grassy characteristic with an acidic heat, that is about 6 times hotter than a Jalapeno pepper. This pretty red chili is long, pointed chili and grows from 2 to 3 inches in length. The stems are long and fine. This is chili whose flavor you will remember, along with the searing heat, behind the heat is a tannic, smoky, slightly earthy flavor. Arbol is related to the cayenne chili. The spicy chili is also ground and added to fruits or vegetables like jicama or cucumbers. Try using these chiles in salsas, sauces, soups, and stews. When using dried chiles, you can opt to toast them first for added flavor and re-hydrate them by soaking in hot tap water for about 20 minutes. Don’t soak any longer or they can become bitter. The best relief for a burning mouth isn’t water; it’s a mild yogurt or sour cream. We strongly recommend that you experiment with these chilies in your Indian dishes to provide a mysterious touch of taste and aroma to a traditional dish! Other cuisines like Chinese and Southeast Asian have benefitted from the incorporation of these chilies

These exceptional chilies are not only about the heat but also about their aroma and taste. In fact, many of the chilies are not ‘hot’ but impart a characteristic taste which is unforgettable. Anchos are the sweetest of all dried chiles. Also known as poblano when fresh, they are only a 1 on a heat scale of 1 to 10. This dark rich mahogany chile has a mild, fruity flavor with notes of plum, raisin, tobacco and a slight woodiness. The ancho along with the Mulato and the true Pasilla form the “holy trinity” of chiles which are used to prepare traditional mole sauces. Essential to many moles, the ancho is also great in enchiladas, salsa, soups and any other sauce that may need mild heat but tons of flavor. Sliced, chopped or pureed, they can be added directly to your recipes. When using dried chiles, you can opt to toast them first for added flavor and re-hydrate them by soaking in hot tap water for about 20 minutes. Don’t soak any longer or they can become bitter. If you love Mexican Cuisine then you will enjoy cooking with the essential Ancho Chili. Serve with baked potatoes or simply enjoy with any food you already eat with sour cream. The best relief for a burning mouth isn’t water; it’s a mild yogurt or sour cream. In fact, many of the chilies are not ‘hot’ but impart a characteristic taste which is unforgettable. One of the most commonly grown chiles in Mexico, the Guajillo Chili is widely used in Mexican cuisine. They are pointed, long and narrow these chilies have a medium heat level. They develop an extraordinary taste: a fruity green tea flavor with berry overtones along with tannic and pine hints. Dried Guajillos are around 4-6 inches long and taper to a point. They have a deep, burnished red color and shiny, smooth skin. Their flavor is slightly sweet and tangy and has a nice spicy finish. Though not too spicy, as they rate about a 3-4 on a heat scale of 1-10. Like other dried chiles, Guajillos can be toasted for added flavor and re-hydrated by soaking in hot tap water, because their skin is thick and leathery, be sure to soak them a little longer, about 25-30 minutes. This spicy flavor makes them suitable for many hearty dishes like meat dishes. In Mexican cuisine, they are traditionally used for dishes like Mixiotes (mutton stew) or the famous Mole sauce. You can opt to toast them first for added flavor and re-hydrate them by soaking in hot tap water for about 20 minutes.
