In our region we grow only traditional varieties of most fruit plants.Times changed but we did not go for good new varieties of plants, to grow in our fields.For example, walnut chandler is one of the best varieties grown worldwide but we only struck to traditional varieties. From many years we used to export walnut, but now almost 90 percent walnut is imported in India. There is no organized cultivation of walnuts in any state of India.Most trees are just wild seedlings in forest lands, the size and quality of nuts therefore vary. We have organic plantation of pusa walnut in our own farm. The best feature of Pusa walnut (Khod) is that its grafted plants start bearing fruit in the second year of planting.Trees of this walnut are semi-vigorous and the fruits are self-cracking(कागजी)in nature which indicates its maturity

They have been used for washing since time immemorial. Soapnuts are being used for commercial use in cosmetics and detergents as well as many other products. They are a popular ingredient in ayurvedic shampoos, cleansers and also used in ayurvedic medicine. The fruits of the soapnut tree are grown in the wild forests of Himachal Pradesh the nuts are naturally sun dried.

Kulath has been cultivated in the Northern parts of India and the crop is being harvested in the season of winter. This grain is supposed to be ‘garam’ – i.e. warming effects on body. It is blackish brown in colour. Horse gram is known to have many therapeutic effects and it has been recommend in ayurvedic medicine to treat renal stones. An excellent variety has a small stem with no soil or broken pieces. Dried morels must always be cooked before consuming. Morels may contain trace amounts of soil which need to be washed out. Put morels in a bowl and pour warm water to cover. Soak until soft for about 30 minute. Wash thoroughly for 7 to 9 times. Morel cannot be rubbed or brushed. Variety : Green & brown

The plant grows wild in the higher reaches of Himachal Pradesh. The black cumin seed is used for cooking, as a medicine and it has incredible healing properties (used as an ingredient in various ayurvedic preparations).The black cumin seed is about 3 mm long. Kala jeera is used in dishes because of its exotic flavour. Seed can be added to almost any dish to add aroma and nutritional value. The seeds have an anise-like flavor and aroma. It is often confused with jeera (regular cumin) and kalonji. Black cumin is not something that you will typically find in every grocery store in the India.

Local people collect the anardana fruit and the pulp remains on the seeds as they dry. There are wild jungles of anaradana and the product is organic. Many pharmaceutical companies and food ingredient manufacturers (masala companies) are making commercial use of anardana in India. Anardana is processed for making churans, anardana goli (digestive products) and chana masala.Khatta anardana or sour pomegranate is used as an ingredient in preparing various Indian foods.
