We have two varieties of Chia - Black Chia seeds and White Chia seeds. In India, our government has given chia seeds to initial 10 farmers, and later on that’s has grown from farmers to farmers.
Chia consume less water, it can be stored in the room temperature dry or cold. It is growing between 8 to 24 * C, too much cold or hot will have the issue with Chia, but the plant and farmers are taking care of this. These seeds later sold to farmers for their next growth.
The Chia flower is purple colour and this purple colour flower will give us the black chia seeds, where as the white beautiful colour gives us the "White Chia Seeds". We would say both Chia seeds have their own pros and cons.
The processing for Chia seeds is done mostly manual, due to its thin quality, where it flow along with flowers.
