Black Rice, as the name suggests, is a variety of rice which is deep black in color. It turns purplish when cooked. This color is due to the presence of high content of anthocyanin (an antioxidant present in dark fruits and vegetables like blueberries, dark grapes, purple cabbages, purple brinjals and so on) in it.
