Nutmeg & Mace are two distinctly different spices produced from a fruit of an evergreen tree usually 9-12 mtr high. Mace is the dried reticulated ‘aril’ of the fruit and nutmeg is the dried seed kernel of the fruit. The trees are normally unisexual, bearing either male or female flowers. The male flowers are born in clusters, whereas female flowers are often solitary. Fruit is a fleshy drupe, spherical in shape, pale yellow in colour with a longitudinal groove in the centre. When the fruit mature it burst open along the groove exposing the bright attractive mace, covering the hard black, shiny shell of the seed called nutmeg. Nutmeg tree is indigenous to Moluccas. The major nutmeg growing areas are Indonesia and Granada. It also grows on a smaller scale in Sri Lanka, India, China, Malaysia, Zanzibar, Mauritius and Solomon Island. Nutmeg thrives well in places with warm humid climate from sea level up to 600 mtrs MSL. It grows on a variety of soils from sandy to clayey loams and red laterite soils with good drainage. A well-distributed annual rainfall of 250 cm is ideal for the crop. Mace is used in savoury dishes. It is used as a drug in Eastern countries because of its stimulant, carminative, astringent and aphrodisiac properties. Excessive doses have a narcotic effect. Nutmeg oil is used in cosmetics and toiletries

    • Mace doesn't get much love anymore, which is a big shame. In the golden age of the spice trade, mace strode across the skin of the world just like its cousin nutmeg. But it seems the modern age only has room for one magical sweet spice that seems to go with everything, and mace lost. Let's fix that. But first, some plant biology. Nutmeg is actually a fruit with a hard stone at its center, like peaches, plums, and cashews. That stone (a seed, really) is what we use as nutmeg. Surrounding the seed is a bright red alien webbing, which dries into what we call mace in units called blades. As you'd expect, the two spices have similar flavors. But mace is a whole different game, as worthy of a culinary adventure as nutmeg, if not more so.

    Nut Mace

NUTMACE Mace is actually a spice made out of the waxy red covering which encompasses nutmeg seeds. The taste is comparable to that of nutmeg, along with a hint of pepper and also a more delicate note which may be overwhelmed by heavy-handed cooks. The fruits of the nutmeg tree enclose the richly flavored nutmeg seeds; mace can be found between the external fruit and also the internal seed, also it takes the form of bright waxy red bands that encircle the seed. Much like nutmeg, mace is in fact the bright, red webbing which surrounds the pit of the nutmeg fruit. It is usually eliminated, dried, and after that ground in to a powder which tastes much like nutmeg, yet a little more bitter having a hint of pepper. Since it dries, high quality mace turns orange, even though brown or cream-colored variations exist. You can use it as both a savory as well as sweet flavor enhancer, utilized as a spice on roast meats or even in things such as cakes or scones.

    • Mace is the sister spice of nutmeg. Nutmeg trees are the only plant to give us two spices. (As opposed to a plant like dill which gives us a spice and an herb.) Nutmegs are the actual seeds of the tree while mace is what is known as an airl—the protective coating of the seed.   Mace’s flavor and aroma differ slightly from nutmeg as its profile tends to be sharper and less sweet. It still carries distinct flavors of nutmeg, but with subtle notes of pine, black pepper, and coriander-like citrus. The essential oils of mace and nutmeg have different chemical compositions and noticeably different flavors even though they come from the same plant. This is similar to how an orange peel will taste and smell different than the flesh.
